Is there any documentation for this template that details setting up dropdown main menu, module positions and colour selection etc. I am struggling to get a drop-down menu as shown on demo site.

I might need to hit up Big Bear for the full details. I think all the options are inside the template parameters. In the Joomla admin navigate to Extensions -> Template Manager -> Polar Bear
In there you should be able to select colours and dropdown menu type.
